This "all the music on one huge piece of poster board" is exactly what you do NOT want to do, precisely for the reason you describe: it blocks the audience's view of what you are doing; they might as well listen to a recording.
IF you are going to use music, you have to make the presence of the music as invisible as possible. If there is simply no other way, turning the marimba to 45 degrees is an option (or even 90 degrees, if you must use a page turner), but that does reduce the sense of connection to the audience.
