I've owned marimbas by Deagan, Kori, Yamaha, Malletech, and Adams, plus UIUC has a Marimba One. The Adams Artist Classic has been my instrument of choice for the last nine years, but it all comes down to the quality of your particular set of bars.
When I had fully tuneable resonators, first on a YM5000 and then on the Malletech, I loved them and couldn't imagine doing without. Now, with the Adams, I don't miss them at all. And that's after having the bars retuned to A440.
The Malletech is a beast -- big and heavy, and much too wide and short in the bass. It did sound the best in a blind test I did at the time, but I grew to hate playing it. Now, every Malletech I hear clanks in the bass register.
The current Marimba One height adjustment does not have a ratchet, just a crank, and it works very easily. However, it is true that the M1 resonators are too heavy and require two people to get in and out of the frame. But given your choice, I'd go with the Marimba One. I'm sure you'll be happier in the long run.
